Ingredients
- 4 bone-in pork chops, 1 inch thick (about 2 1/2 lbs total)
- 1 1/2 lbs baby yellow potatoes, cut into halves
- 4 large carrots, peeled and sliced into 2-inch pieces
- 1 large yellow onion, sliced into thick wedges
- 1 1/2 cups fresh apple cider
- 1/2 cup low-sodium chicken broth
- 2 tbsp coarse whole grain mustard
- 1 tbsp brown sugar
- 1 tsp garlic powder
- 1 tsp dried thyme leaves
- 1 tsp salt
- 1/2 tsp freshly cracked black pepper
- 2 tbsp cornstarch
- 2 tbsp cold water
Instructions
- Arrange the halved baby potatoes, carrot pieces, and yellow onion wedges in an even layer across the bottom of a 6-quart crockpot.
- Place the bone-in pork chops directly on top of the vegetable layer.
- Whisk together the apple cider, chicken broth, whole grain mustard, brown sugar, garlic powder, dried thyme, salt, and black pepper in a measuring cup until smooth.
- Pour the apple cider sauce evenly over the pork chops and vegetables.
- Cover with the lid and cook on LOW for 5 to 6 hours (or on HIGH for 3 to 4 hours) until the pork is tender and reaches an internal temperature of at least 145 F with a food thermometer.
- Carefully transfer the pork chops and braised vegetables onto a serving platter and tent loosely with foil to rest.
- In a small bowl, whisk the cornstarch into cold water to form a slurry. Whisk the slurry into the liquid remaining in the crockpot, cover, and cook on HIGH for 10-15 minutes until the gravy thickens.
- Spoon the rich apple cider gravy over the pork chops and vegetables, garnish with fresh thyme if desired, and serve warm.
Tips
- Use thick-cut bone-in pork chops (at least 1 inch thick) to prevent the meat from drying out during the long braise.
- For meal prep, slice remaining pork and store alongside vegetables in airtight containers for up to 3 days in the refrigerator.
- If you prefer a sweeter flavor profile, swap chicken broth for an extra 1/2 cup of fresh apple cider.
