Instructions

  1. Pour 1/2 cup of marinara sauce into the bottom of a 6-quart crockpot slow cooker.
  2. In a large bowl, combine the uncooked bulk Italian sausage, cooked rice, chopped sun-dried tomatoes, chopped baby spinach, minced garlic, Italian seasoning, salt, crushed red pepper flakes, and the remaining 1/2 cup of marinara sauce. Mix until thoroughly combined.
  3. Spoon the sausage mixture evenly into each hollowed bell pepper half, pressing gently to pack the filling.
  4. Arrange the stuffed pepper halves upright in the slow cooker, nesting them closely so they remain upright.
  5. Cover and cook on LOW for 3 1/2 to 4 hours (or HIGH for 2 to 2 1/2 hours) until the pepper shells are fork-tender and the internal temperature of the meat filling reaches 160 F on a meat thermometer.
  6. Sprinkle shredded mozzarella cheese evenly over the top of each pepper, cover, and let cook for an additional 10 minutes until melted and bubbly before serving.
